Ask anyone what their favorite breakfast sandwich is and a bacon, egg and cheese is sure to come up more than once. So, for fans of this iconic sandwich, a New York bar called Pebble Bar debuted a cocktail that offers all of those savory flavors in a delicious sip. Named the Pebble, Egg and Cheese, this drink is a breakfast lover’s dream as it contains bacon-infused bourbon, a special bagel-flavored spirit and, of course, an egg white. The cocktail also boasts a fun egg design that enhances the experience of drinking it. In December, this drink debuted on Pebble Bar’s menu in collaboration with Vital Farms (a pasture-raised egg and butter company) and Black Seed Bagels (a New York-based bagel shop). While it was supposed to be available only from December 9 through 31, Pebble Bar extended the offering to January 15 after positive customer feedback.
Tim Sweeney, partner and head bartender at Pebble Bar, developed the drink using specialty ingredients, including a clear fruit brandy called eau-de-vie that’s infused with Black Seed’s surplus bagels. “Black Seed is committed to reducing food waste and the upcycled bagel eau-de-vie is one of our most creative ways to redirect food waste yet,” Matt Kliegman, Black Seed Bagels and Pebble Bar partner, says in a press release. “When Vital Farms challenged us to create a bacon, egg and cheese-themed cocktail with it, we knew Sweeney could create magic in a glass.”
The cocktail is shaken with bacon-infused bourbon, an egg white, simple syrup and other ingredients before it’s served in a coupe. A sunny side up egg design is created on top using everything bagel seasoning, cheddar cheese powder and a black pepper mix. See how Sweeney whips up this drink in the reel below!
The recipe for a pebble egg and cheese cocktail
Below, Vital Farms shares the recipe to this unique breakfast concoction. Since this recipe uses some hard to find ingredients, consider it your sign to enjoy breakfast in unconventional ways in 2025 and beyond!
Pebble Egg and Cheese
Ingredients:
Cocktail:
- 1 Vital Farms pasture-raised egg white (see note at the end of the recipe)
- 1 dash black pepper
- ½ oz. simple syrup
- ¾ oz. lemon juice
- ¼ oz. Black Seed Bagel Eau-de-Vie
- 1¾ oz. bacon-infused Jefferson’s Bourbon
Bacon-infused Jefferson’s Bourbon
- 2 oz. (¼ cup) bacon grease, from 4 to 5 slices applewood smoked bacon
- 750 ml Jefferson’s Bourbon (or your favorite bourbon)
Rim and “Egg Yolk”:
- Everything Bagel Seasoning + Cheddar Cheese Powder Mix (3:2 ratio)
“Egg White” Outline:
- Everything Bagel Seasoning + Black Pepper Mix (3:1 ratio)
Directions:
- Start by preparing the bacon-infused bourbon. Place the bacon in a skillet over low heat. Slow cook the bacon until crisp and browned. Remove the bacon—that’s the cook’s treat!
- Pour off two ounces (¼ cup) of the rendered bacon fat from the pan.
- Pour the bourbon into a large glass container like a one-quart mason jar
- Strain the bacon fat into the container, tighten the lid on and give it a good shake. Infuse 6 hours at room temperature, shaking every hour or so. Place the mixture in the freezer until all the fat is solidified, about 1½ hours or up to 3 days.
- With a slotted spoon, remove the fat and strain the mixture through a sieve lined with a coffee filter.
- Pour the bacon-infused bourbon into a bottle and keep it stored in the freezer or fridge.
- Spritz half of the rim of a coupe with vodka and roll it in the Everything Bagel + Cheddar Cheese Mix. Add all the cocktail ingredients to a shaker. Dry shake. Shake. Double strain it into a coupe. Using a round stencil, add an “egg yolk” to the top of the foam using the Everything Bagel + Cheddar Cheese Mix.
- Stencil an “egg white” outline around the yolk using the Everything Bagel + Black Pepper Mix.
