Cottage Cheese Egg Bake

Ingredients:

  • 12 eggs
  • 1 cup cottage cheese
  • ½ cup yellow onion, diced (about ½ an onion)
  • 1 cup spinach, chopped
  • 6 cherry tomatoes, diced (about ½ cup)
  • Half a zucchini, diced or shredded (about ½ cup)
  • 1 cup shredded parmesan, divided
  • 1 tsp garlic powder
  • ½ tsp. salt, plus more to taste
  • ¼ tsp. black pepper, plus more to taste

Directions:

  1. Preheat oven to 350°F. Grease 9-by-13 inch baking dish by spraying it with olive oil or cooking spray.
  2. In large bowl, beat eggs, cottage cheese, salt, pepper and garlic powder together until fully combined. 

  3. Add yellow onion, spinach, cherry tomatoes, zucchini and half parmesan cheese to large egg mixture. Stir to combine.
Pour mixture into greased baking dish and top with remainder of parmesan cheese. 

  4. Bake in oven 35 to 50 minutes or until edges are set and center is golden brown and barely jiggly. Remove from oven.
  5. Cool slightly and slice into 8 even squares. Serve warm and enjoy!
